My Chobani Experiment: Apples To ApplesHamdi Ulukaya,the CEO, founder, and president of Chobani says it is the straining of the yogurt that makes the difference. Really? Straining for 8-9 minutes? In a centrifuge? Are you kidding me? Choban is NOT Greek yogurt by any stretch of the imagination. Ulukaya also says the secret of his success is simplicity. “We want to make yogurt the way it was meant to be,” he says. His yogurt, he says, “is exactly the same as what his mother made by hand back home in Turkey”. Me? I’m not thinking so. Ole Hamdi has gotten wealthy beyond belief lying about his “Greek” Yogurt.

    I make my own yogurt and if my calculations are correct, I get 4 net carbs in one cup. I use 1/2 Fairlife whole milk and 1/2 heavy cream. Let ferment 12-15 hours, then strain whey for 6-8 hours. It results in very high fat, low carb. By my estimate per cup: 4 g net carbs, 67 g fat, 13 g protein.
