I would wonder if her home kitchen is certified gluten-free and I think she may be in some bad territory.
This is where I would go for gluten-free stuff. It is a huge shop and I am sure it has pretty much everything you might want. www.theglutenfreeshoppe.com
Good Luck

Her bakery is closed but she continues to take small orders through Etsy for a few goods made at home. Is there an alternative company that you recommend?

John,
Is this place even still in business? The only place I can find their products is on Etsy and I have to say I didn’t know you could buy food on Etsy which is something I would definitely NOT do.
They do not have a website (anymore) and their Facebook says they have closed. I believe just a couple of weeks or so ago but after Memorial Day. It also appears she was selling all her equipment etc. and I am wondering how she can continue selling on Etsy as the last review way June 11th, 2016.
To answer your question about the cost of testing through Exova. It depends on the product but most times it is just under $700. If you are
even thinking about having one of her (Janet Lund) products tested what would you do with the information as the bakery is closed? My advice is to discontinue eating the products. Most times if it sounds too good to be true-it isn’t.

How much does it cost to send an item to Exova for analysis? I sent an inquiry and haven't heard back. I tried an amazing non-gluten flatbread from a small bakery called BootinGluten and with 4 net carbs it's hard to believe. Food testing is $200 and upwards so how can you afford sending products for testing? I'm also not a diabetic so I don't check my blood sugars.

Thank you so much for your response. I understand what you are saying but was also questioning their claim that they add a carb inhibitor to their food and that is why the body does not absorb the carbs. With that said, I assume that is why they say the body only absorbs the carb amount listed on their labels. In my experience I have experimented with fat inhibitors such as orlistat (alli). They did work for me in weight loss as the proof was in the toilet :) I don't have much knowledge regarding carb inhibitors so I guess my question to you is if their product does contain this so called carb inhibitor is it possible that you can actually eat their food without the body absorbing the additional carbs that the lab says is really in their product.. ( I hope that made sense) I really appreciate you taking the time to educate me and look forwarding to hearing back from you.. I have been doing LCHF for over a month and the results are wonderful (down 15 pounds) I will admit the muffins are delicious (too good to be true and I don't want to sabatoge myself and knock myself out of ketosis. Thanks again.

Cynthia,

You state you are not a diabetic and as such, your insulin response will (should) be different. There are three things this company hopes for. 1.) That you are not diabetic. 2.) That if you are-you do not test your glucose levels and many diabetics do not and 3.) That you inject insulin if you are diabetic. Injecting insulin is designed to take care of any high carbs that are eaten and the same thing happens with your own insulin. If you don’t believe a food testing laboratory results then I have don’t know what else to say. The products are bogus and this company is preying on people. Did you look at the comparison chart above? It tells the truth.
If you do a two hour pp test as a non-diabetic you should be fine. It does not mean the muffins or whatever WiO products you are eating are lowcarb, it means you are not diabetic and make no mistake the products are NOT lowcarb.
To answer your question below: You never hear back from the FDA-it’s a one way street. You make the complaint, they take it from there and the only way to find out what is going on is through the Freedom Of Information Act (FOIA) and it takes a long time.

I use the products and am type 2. It never spikes my blood sugar, I stay rather normal actually. I am now no longer taking any of my medications for my diabetes and I have lost 35 pounds in the last few months. You can obviously feel the way you want with this, but I myself have see amazing results using Wio and I have see others that are having the same success.
